Now what is that ? In India , we have our very own version of the pizza which we call the Uttapam. It is the desi version of our very own pizza which is made a bit differently and is pretty tasty and healthy too. I and my family always prefer the one made with semolina. You may also use rice flour instead of semolina.
So guys, are you yearning for the recipe? Here it goes :
I will be providing the recipe for 6 uttapams :
Ingredients :
semolina : 1 cup
curd : 1 cup
grated ginger : 1 tablespoon
chopped onions : 1/2 cup
chopped red tomatoes : 1/2 cup
chopped green chillies : as per your taste (this is optional)
salt : as per taste
oil : for cooking
Preparation of the batter :
Roast the semolina in a heated pan for about 2 minuites. Mix the roasted semolina, grated ginger and curd in a bowl. Add a bit of water if required. Cover the bowl and keep it in a warm place for 45 mins for fermentation. Add the salt as per your taste and mix gently.
Preparation of the Uttapam :
Heat a non-stick frying pan and pour a teaspoon of oil in it. Now take the batter in a ladle and spread it in the frying pan in a circular motion thereby making an uttapam.
Top the uttapam with a few chopped onions and tomatoes and turn the uttapam over so the other side also gets cooked.
Your Uttapam is ready to be served. You may serve it with green chutney, coconut chutney or even tomato sauce.
Other variations include toppings with cheese, cheese spread, peas, grated carrot, curd, mayonnaise, finely chopped spring onions, soyabean chunks etc. You have to be innovative with the taste to create different variations of Uttapam. The base remains the same (just as a pizza) and the toppings change as per your taste and innovations. My daughter loves it topped with mayonnaise and chopped capsicum. Likewise , keep experimenting with different veggies and spreads and make your own special topping.
Enjoy your Desi Pizza !!
